Wheat and chickpea stew

Wheat must be left to soak at least 18 hours prior to cook it, until it opens like popcorn. Then, it must be filter and added to the stew. In winter time, it can be served with pig’s trotters without the bone (previously set with the gelatin, not the bones). In Easter or spring, it can be served with cod and snails.

Preparation

All these dishes have their corresponding sauté, plus sweet Totana pepper and celery, mint or fennel aromas.
